Goldenke 11 is the result of a shared dream — the dream of crafting a truly unique drink. What began as a hobby quickly turned into a mission: experimenting with honey to create a sparkling beverage reminiscent of champagne. Eventually, we succeeded in developing a delicate honey wine with the perfect taste. At first, we shared our treasure with friends. Later, we decided to share these fine honey bubbles with the world.

To honor the elegance of this sparkling wine, we designed a bottle with a refined label — a centerpiece for any celebration, a companion for unforgettable moments. In 2021, the very first batch of natural honey wine was born — crafted from honey and passion.

Goldenke 11 is a 100% handcrafted product, created by a food technology engineer and an MBA graduate. We personally oversee every step, from honey selection to the final sale. As a family-run business, we choose only the finest raw ingredients — because we brew everything ourselves.

Each batch of Goldenke 11 has its own unique flavor. This is made possible by using various types of honey: floral, eucalyptus, forest, lavender, buckwheat, and many others. Often, several varieties are blended into the base of a single batch, creating a broader and more complex flavor profile.

Batches range from 15 to 100 bottles — and each one has its own peak. This sweet / semisweet, sparkling beverage is unlike champagne, prosecco, or cava. It stands out for its body, richness, and the natural intertwining of aromas and flavors — creating a truly one-of-a-kind composition.

We’re passionate about experimenting with honey’s natural aromas to discover new flavor nuances, to observe and taste every subtle shift.

For every new batch of mead, we carefully select yeast strains based on the honey variety and the desired outcome. After all, the flavor of the sparkling wine is influenced not only by the honey, but also by the yeast. Depending on which notes are dominant in the honey, we choose the yeast that will best enhance them. After the first fermentation, a sweet reserve and special champagne yeast are added before bottling.

Each batch then matures in our cellar for anywhere from seven months to several years. We determine the right level of sweetness — from semi-dry to sweet. The wooden barrels used after the first fermentation also contribute their own signature to the flavor and aroma profile.

Thanks to our careful honey selection, our curiosity for flavor discovery, and our dedication to every step of production, Goldenke 11 has grown into a standout among alcoholic beverages in Germany. We continue to explore new flavor paths, collaborating with beekeepers from across the country and around the world, and experimenting with ingredients.
